Wine Making
Kyoho harvests Tekijuku grapes and ripe grapes from September 15th to October 14th.Muscat Bailey A harvests ripe grapes on 10/16.
Kyoho did Cord soak for 2 days and used 100% free run.
Bailey A is de-stemmed100% free run immediately after crushing.
Blend this fruit juice for one dayAfter clearing, the supernatant is fermented at low temperature. After the fermentation is complete, the wine is stabilized, filtered by 0.45 μm and bottled.
